I thought I would just jump on and post the recipe for the Warm Black Bean Dip. I like to eat it like chili for lunch with a few tortilla chips.
WARM BLACK BEAN DIP
1 small onion, chopped (opts)
2 cloves garlic, minced (0pts)
1 tsp veg oil (1pt)
1 can (15 oz)black beans, drained (1pt)
1/2 C diced fresh tomato (0pt)
1/3 C salsa(0pt)
1/2 tsp each cumin & chili powder (0pt)
1/4 C shredded cheddar (abt 4 pt-for reg cheese)
1/4 C minced fresh cilantro (0pt)
1 Tbsp lime juice (0pt)
Total points=6pts
Saute' onion and garlic in the oil til tender. Add beans, mash gently. stir in tomato, salsa, cumin and chili powder. Cook and stir just til heated through. Remove from heat; stir in cheese, cilantro and lime juice. Serve warm with chips.
I have found that by using a can of S&W Carribbean black beans I can do without the lime juice and cilantro, because they are already in the beans.
Also for WW purposes I usually don't add the cheese til I eat and then only a Tbsp or so. It's the cheese that makes this have any points at all.
If I eat half the dip made without cheese and add my own TBSP of cheese, then its only 2 pts per serving....then add the points of the chips. Oh, and remember you can count that oil towards your daily oil.
Not a bad lunch. I hope you guys will share any recipes you come across that you like or any tips that help you out. It's easy to get in a rut and since I've done this so many times, I'm kindof tired of what I've done before.
