honey candy: Cook 2 C. Sugar, 1 C. honey and 1C. whipping cream until the thermometer reaches 285 degrees. (I cook to 280, but you are lower so you must go higher)
Stir occasionally while the candy cooks. Pour the candy into a cooker sheet which you have covered with butter. DO NOT use pam or other sprays!! As soon as it starts to cool enough for you to handle it, start gathering it up together and then start to pull it. Pull until it is light in color and getting more difficult to pull Put on the counter or the table or on wax paper. Mark and break and enjoy. If you cook it on humid days you have to cook it a few degrees higher.

Hard tack: Cook 1 cup sugar, 1/3 C. White Karo Syrup, and 1/2 C water until it measures 285 degrees on the thermometer. Stir continually until sugar is dissolved and then occasionally after. Remove from heat. Add 1/2 teaspoon flavoring and a few drops of food color. The Oil of Whatever works better than the regular flavorings, but the regular ones work ok if you put a whole teaspoon or more of flavor. Pour into prepared molds, or onto tin foil. If you put it out onto tin foil, do not stir it around or play in it while it cools, or it will stick to the foil. When cold, take it off the foil, turn it up side down and crack from the flat underneath side. yum.

Uncle Lyle and Boyd came down on Friday night and went back on Sunday. They actually stayed here both nights. They went to Muley point, and other scenic places. We had a fun visit with them. Joel is moving back to Provo. He will be teaching at UVU. Ruth is having another baby girl.

Stacy and Zoie came down on Sunday with Stacy's friend Kristie and her two kids. Kristie had work here at the court house. They had a fun day. Rode four wheelers, went to the lake , etc. They are staying in Moab tonight, as Kristie has to be to their court house tomorrow. It was fun to have them here.

John and Trish are moving to Idaho when school is out. John will go earlier. I need to start thinking about someone to work. I plan to list the business, but it may take quite a while for it to sale. Who knows, maybe it won't sale at all. I hate to put a help wanted ad in the paper or window, because you have to deal with everyone who sees it. If any of you can think of someone around here who might want to and be able to do it, let me know. I'm not sure anyone has the passion for it that I have had. I still keep thinking of things I want to do with it. I guess I'll have to keep on as though I might be there for quite awhile, so that if I am here, I'll have taken care of the things I want to. I'm trying to get a packet put together for ordering letterman jackets and things like that. Any of you want to help me?
